Adrian has it right
basically you run as thin a grade as you can whilst maintaining decent film strength on the crank an cam bearings
the push these days is for 0W20 to help with fuel consumption but I wouldn't go any thinner than 5W30 most of the time

we used to run a 0W15 in the F1 engines but these didn't have to last that long (3000km)
