Front: 225/40R18
Rear: 255/35R18
Or get same size that will be large enough to still fit the front and space out the rear so I can do standard tire rotations.... what size spacer for say the 255s all around?

18x8 +45 MOTEGI RACING MR116 will work for your front. I have the same exact size wheels for my front with the same offset, though now I have added a 10mm spacer making them +35. I am using a 225/40/18 MPSS front tire.
If you want a wider tire for the rear, I would suggest getting a wider wheel. Like in the link below. I ran a 245/35/18 on an 18x8 and it was too wide. The 255/35 is not going to be a good fit.
I have 18x9 +37 rear wheels with a 245/35/18 MPSS tire. Since my set up is close to a 18x9 +35, (like in the link) I can tell you that it will fit a 245/35/18 tire lowered on tein springs. But a 255/35 is going to be close and may rub.

Or get the 18x8 +45 all around with a 225/40 and call it a day. You can rotate the tires that way. Adding a 10mm front and a 15mm rear will make the wheels flush. (Or 15mm front and 20mm rear for a more aggressive look)
It really is about what you want out of the wheels and tires.
