Now I'm just worried about what to do for winter setup on rims and tires. So much regret, didn't plan it out that far, haha. I'll probably end up doing something like 17x8's or 18x8's and contemplate using spacers to fill the gap from the rear fender.

I ran 18x9.5 +38 rpf1s before going wide. They were 265/35/18s Sumimoto HRZ IIIs all around. During that time I was pushing around 11lbs of boost ~350 WHP on e85, which caused for some wheel spin from gears 1-3. I decided to build the motor up during the winter and turn the boost up at the same time to around 18lbs. By then I decided it was probably just safer to add more meat and go wide. Running 285s now on the rear and MPSS all around.
I wouldn't even worry about the gap during the winter. It will just give you more space to prevent slush splashing up. People will be so surprised to see the car that they won't notice the gap anyway.
