My buddy with a '17 PP did two track days with me on his stock pads/fluid and had zero issues. I'd just start with stock and see how they do for you.

Brake fluid - ATE Type 200. It's cheap and easy to find domestically, and while it's a DOT 4, it meets DOT 5 specs for heat. It's excellent, but for first track day - you might not need it.

Oil cooler - Just go Perrin. I spent a lot of time researching this for my supercharged BRZ and the Perrin has the fewest compromises while being the most complete. If you add boost later, you can upgrade it to a larger core.
