I just drove it home from FullBlown, and even with the 65C thermostat, the coolant temp still rose to 202F when sitting at idle. The fans would then turn on, and fall back down to 194F. Im starting to think thats normal

That's perfectly normal and nothing to do with the thermostat. Need that air flow. That's why the nascar guys blow up just because they pick up a plastic bag across the bumper.
