For 3 years I had 550 whp and 480 wtq on stock t-stat and stock radiator cap, stock overflow tank on FL heat and humidity, sometimes doing 7 pulls back to back to back getting the oil temp over 250 (track day too). Only difference I see is I had aftermarket radiator and oil cooler. Never had an issue with coolant temperature.
I don't think a higher pressure rad cap will fix it. I see some bigger problem here unless the overflow little tank is really a flawed design, but that doesn't explain how it was working normally until this day.
The fact that T-stat didn't fix it is suspect. I'm thinking now more it might be headgasket.
