My impression from my reading on XDA, which is a
lot, is that you'd be hard pressed to tell the difference under normal use. I'd just get whichever one looks/fits the best. Even my old 1GB RAM MTCB unit runs Torque, Google Maps, and XiiaLive or MTCMusic at the same time without any real issues. The newer 2GB RAM units all feature much faster boot and app loading times...for these things the differences in architectures is largely academic to the end user.
One thing to note is that there are no custom ROMs for Intel units, while there are several for RK3188 ones, and at least one for PX5 (as long as the MCU is MTCB/C/D of course).
