I had a boss that did this, automatically. He set up rules with a few exceptions (primarily his higher ups) and anytime he went on vacation his OOO basically said:
"I'm out on vacation and won't be responding to your email. Between <the day he left> and <the morning he got back> your email will be automatically deleted from my Inbox. If it still needs my attention on <the morning he got back> please resend and I'll reply right away."
It worked great for him, except for messages from me. Oddly enough, he would get all my emails first the morning he returned because I would set the "delayed delivery time" in Outlook to after the time I knew he would turn off his alert. So, the first messages in his inbox would always be from me. It annoyed him to no end because he couldn't figure out what I was doing (most folks don't know about that feature).
