Anything upstream or downstream can change the way the air flows through the intake, the MAF sensor only measures air passing the sensor area. If you change the snorkel, the airflow over the sensor will likely change as well. How much/little can only be determined by testing, I did some basic tests on removing various parts of the OEM intake years ago and it made quite a difference to the MAF readings.
