If so, at which offset (these are a custom order so I can get any offset between +20 to +55). As long as the wheels are nearly flush(+/- 10mm), I am ok.

I am looking to be able to just pop these onto my brz and go with no issues. If that's not possible with the above set of wheels, would 8.5" wide squared wheels work?

Up to 245 with a 9" will fit on stock with 40ish offset. I would suggest 245/35 it's the closest diameter to stock. Refer to meaty tire thread
