Well, you're never really going in a perfectly straight line, although that's the goal. You're usually making minute steering corrections because no car goes perfectly straight and no road is perfect either. Over correct a little bit and it can snowball.
That's how people going seemingly 'straight' suddenly start swerving, losing control etc.
