Apart from fuel consumption, what, if any, downsides are there for the 5W-30? It is less expensive, and easier to come by, and could be expected to give greater protection. The poorer consumption would be offset by the difference in cost and possible long-term wear benefit. Does the thick stuff mess with variable valve timing?

I doubt it would affect fuel consumption. Quite a few guys are running 5w30 or heavier in their track cars. To my knowledge, all new cars use 0w20. Perhaps it saves wear when people drive them cold? Unless you have a good reason to switch(like the oil can't handle track heat) other than saving 5$ every oil change... I'd stick with OEM recommendation. I'm sure they decided on that viscosity for a reason. Maybe manufacturing tolerances have gotten tighter and needs the super watery synthetic oil to get into the gaps that conventional oils from the 90s can't
