You would gain 5mm of clearance from the offset changing 5mm. The shape of the tire would be slightly different because of the wider rim.
The problem isn't your wheel. It is the diameter of the tire and the limited clearance on stock struts.
255/40-18 are too tall. Get rid of them. Or keep on trying to fit those bad size tires with other, more expensive fixes. Or just deal with the rubbing.
