Look for end spaces. That way your chances of getting a door ding while parked there are cut in half. I usually park with the driver's side door facing the end of the row so that I won't get a brodozer there blocking my door from opening all the way. I also try to park facing the opposite direction of other cars where practical, so that my passenger door is facing the passenger door of the next car. Not every car has a passenger, so the chances of a passenger door opening into my car are less than the chances the driver's door hitting me. Also, there's a lot of variation in the width of the parking lines in every parking lot, and I've gotten pretty good at finding the wider spaces.
All you can do is play the odds and try to stack them in your favor.
