That was two separate trips. I changed the oil after I got to Vegas, when I hit 7500 miles. Then a month later I went to Texas and back. If I was doing a road trip of more than 7500 miles at one time, I would schedule an oil change at a Toyota or Subaru dealer along the way. If it was less than 7500, I'd just do my own oil change right before and right after the trip.

An 80 mph speed limit is deceptive. People who will do 85-90 in a 70 all of a sudden slow down to 78 when the limit goes up to 80. I think the higher legal limit psyches them out a bit. If you stick to 130-135 kph you'll be fine.

Definitely look at mountain roads around LA while you're there. There are a lot to choose from. Make sure you watch for bicycles though; they're very popular in that area. And cops. They're less popular.
