Very doable. I put about 7000 miles of road tripping on my car within the first six months of owning it. All the way across the country, from Delaware to Las Vegas. Then Vegas to Wichita Falls, TX, then back to Vegas.
I will say that SLC to Vegas is boring as hell except for one short stretch through canyons in Arizona, but that's always under construction. The speed limit through Utah is 80, and stick to it. The highway patrol is all over I-15.
South of Vegas, pull off on Hwy 138 just south of Victorville, CA. Take that west to Hwy 2 (about 10-15 miles off I-15) and take Hwy 2 through Angeles Forest. It's about 60 miles of super curvy fun roads. It puts you out in La Canada/Flintridge. This is well worth the detour.
