I'm looking at some 18x7.5 and I hear they rub in front. That's why our twins come staggered. I DD, so I don't want quick wear or rubbing on u turns. I see the speedometer will stay same.

You won't rub unless you are lowered 2 inches or more.
Don't stagger. Our cars don't come staggered. Staggered is a bad idea because you can't rotate tires, so they would actually wear faster. 225's should last longer as the load rating is higher and you are putting less stress/weight on them.
225/40-18 is the BEST CHOICE. You are over thinking it. The hard part is finding the right tire with the right balance of price/grip/life/safety(rain)/noise/comfort. DO IT and enjoy it. Trust.
