For myself, and I'm not 100% sure what's "better", I let the computer do its thing dialing back the IAM and building it back up while I'm running on track. I also haven't been running an oil cooler so I'm running a lot hotter and getting much more knock correction than you are. I never bothered to try for a pure "track tune". I'll dial my ignition advance so there's little to no knock correction at temps higher than normal (not quite as high as what i'd see at the track) and call it a day. My IAM will fluctuate from as low as .85 to 1.0 on a track day, and run solid 1.0 with minimal FLKC otherwise. I'm pretty happy with that.
Yeah funny thing - I didn't actually set out to build a track tune, but it's going down that path isn't it? I figure since I have my logs from my hottest track days, why not build a tune that's as safe as I can get it.

For my latest tweaked v2.076 map, I basically took the log you just saw and:

1) Took out 0.5 x FLKC values from base timing B at loads above 1.00 g/rev, ignoring all FLKC under -0.69.

2) Threw in slightly more aggressive IAT timing comp.

3) Added a little coolant-based timing comp.

4) Leaned out the commanded AFR a little. I know this one is counterintuitive, but I was pegging the o2 sensor rich (11.25) on some of my logs from last year.

If this gets me track logs with FLKC and KC at -0.69 or below (and AFR holding ~12 to redline), I'll be pretty happy.
