Unless your tires are very soft and you are racing the car, you will not see appreciable wear in a week.

OP, it's possible but I wouldn't worry too much especially at 2-3mph - the tires/suspension take worse impacts hitting potholes and such.

You could always get some toe plates ($40, less if you make a DIY set) which only tell you what total rear toe is, but will tell you if toe changes over time or if total toe is too much/not enough which would indicate some drift. If the car still drives straight, I really wouldn't worry.
