Sounds to me that you've got too much of a plan to go too many places, not spend much time in any place....if you can find the time...
I'd suggest Cape Split...best place I've been, a real thrill on the east coast. But it's out of the way...west of Blomidon Provincial park. And possibly a two hour walk each way out to the cape. A real thrill it is to be on beautiful grass, all alone, with your feet hanging over the edge, fantastic view of Bay of Fundy. Beats Niagara Falls as a go to place in my opinion. Of everything I saw in New Brunswick, PEI, and Nova Scotia, Cape Split, by itself was my strongest, best memory.

And if you're going to Cape Breton, a beautiful drive it is there. Don't miss Meat Cove and the tame foxes just near there, on the side of the road. Camping at Meat Cove as well. And make sure to ask if Pilot wales are visible at the time of year you go (west of Cape Breton as I recall), and ask from where best to view them.
