This is not entirely accurate.
Heel-toe is ONLY used when decelerating and is used to make the gear shift transitions smoother (less jerk on the wheels).
This is particularly important when trail-braking during hard cornering where if you shift too abruptly you can upset the car and loose traction in the rear.
Stopping is just a variation of decelerating.
You can also decelerate using JUST rev-matching and no braking...
In this car I use the extended gas pedal and instead of
heel-toe I use both balls of my right foot.
Big toe on brake, right side on gas to blip.
In my Porsche the gas pedal hinges from the floor so I actually use the heel of my foot to blip the throttle.
