you do realize that your coil-overs have springs on them, and you can change these springs to get a different spring rate.
however a change in spring rate will require you to change the dampening setting on the struts to find the right ride softness/stiffness.
to your original questions, you shouldn't need to roll your fenders with your current wheels.
