I don't think you'll need to roll your fenders with that setup. I'm running 18x9.5 +35 with 235/40 lowered about 1.8-2 inches and it rubs on the plastic tab in the rear only under really heavy compression. Even then, the rubbing has mostly disappeared since it's worn itself down.

As for how low you could probably go, you can probably go until your tires hit the inner fender well. Just keep in mind that the spring rate for the stance coilovers is somewhat soft at 6k f/r. And also keep in mind that you'll likely need rear lcas if you're planning on going max low as the camber wear in the rear will get real bad, real quick.
