Question (HELP) 17x9 RPF1 meaty fitment

I need some help!

After months searching I found the wheels I want to run on my 2013 BRZ.

I want to run 17x9 RPF1's with a 245/40/17 tire

I currently have Eibach Pro-Kit lowering springs which drop my car 1" in the front and 1" in the rear.

What offset would I need to be able to run this setup with 0 chance of rubbing? Would I have to ditch the springs? I would like to start getting into track days.

Going for this look (this guy is running 17x9 +35 with a 245/40/17 but I'm not sure if he has lowering springs or not. Nor am I sure whether his setup rubs. It also looks like his wheels stick out pretty far.)
