245/35 is also an option. Look at the tire specs, one brand in one size may be different on another. Look at the recommended wheel width for each tire.
245/40 is slightly tall, it depends on how low you are. If you aren't lowered more than an inch you should be ok. Much lower(~2inches), you could rub near full lock.

245/35. On stock suspension +40 will be very close to the strut. Maybe 5-10mm or less. Everyone's setup is slightly different. Not sure if you will rub.

18x8.75 will fit fine. 255 are ok. 265, look at the first post on this thread.
18x9.75 won't fit unless you run 4-5+ camber or are ok with 20-30mm of poke.

+35 17x9 is a common setup.
Stock 215's on a 9inch is a medium to big stretch. Read the specs on the tire from the manufacturer and decide if you feel it is safe or not. I personally don't mind a stretched tire, but they have higher chance of failure because the tire was not designed/tested/etc in that manner. Once again, look at the tire specs. If it makes you feel any better I am running a 225/40-18 on a 9.5 width wheel.
