I've driven manual long enough that I can accelerate the car from a stop uphill without the need of the parking brake. However, I like having the ability to have the parking brake engaged before accelerating in certain situations - i.e. a car too close to your rear.
There's little need for using the e-brake to hold the car while starting uphill, but there's no detriment if you need it. People interpret things differently. Live and let live.
