It sounds like your ball joints aren't settling, when a ball joint is bad, you get that feeling of the steering wheel not wanting center by its self. However, i dobut the ball joints are shot. Did you install them with a proper ball joint tool? Or did you hammer it in the Honda way? It could be an alignment though.

The ball joints were really stiff out of the box when I was playing with them before I installed them. I pressed them in the the proper tools on a press at the shop
