Noticed it more after I changed my exhausts.. and no I don't rev more cause of the sound. I drive the same with stocks.

I can get that on E85 in city traffic.
But these cars are very sensitive to how you drive
you need to be using the highest gear possible and light throttle to get decient economy
when you changed exhaust was that header or just catback did they use new gaskets ,
exhaust leaks at header can cause issues with 02 sensor readings but not in catback area
if your on 91 fuel with stock tune in high temps its going to knock and the ecu will pull a crap load of timing to protect motor, especially if your driving in the below 4000 rpm area all the time. and the IAM ignition advance multiplier will never reset unless you do some light steady throttle runs to above 5000. It will reduce again when it knocks enough.
if you had a tuning device we could log it and fix it
but you could try occasionally doing a couple of light steady say 10 to 15% throttle runs in second or third and jist let the rpm slowly clim to 5500 or so this will bump your iam up , untill you get more knock, but it will probably result in slightly better economy.
you logs would probably look like this iam at 0.2 instead of 1 and evry time you get on the throttle hard it knocks like crazy.
the stock tune runs like crap on 91 fuel, its not dangereous just way below optimium
