I have lived in Nova Scotia practically my whole life and I presently live in Halifax. If you want to cover the province here are a few great stops and roads (somewhat in order West to East).

Annapolis Valley - Several nice spots here; Cape Split is a great hike if youre into that sort of thing. Wolfville is nice, stop at Joe's food emporium and get Scottskins.

South Shore - Make your way to lunenbourg it's a must then drive along the shore through Mahone Bay, Chester and keep going.

Halifax (optional) - it's a city, there's lots to do and see in Halifax but unless you have several days to do it, there's not much point. Most bars per capita so if drinking is your thing then you may want to stop here.

Route 245 / 337 - On the way to Cape Breton there's a route which follows the northern shore of mainland NS and loops back around to the main highway. I havent actually driven this one yet but I heard its an amazing driving road.

Cape Breton - Baddeck routinely makes the top "most beautiful towns" list its a good place to start your drive through the highlands. Drive the entire Cabot trail. Dont bother going back on your footsteps to save time, drive the whole loop. there's whale watching in Cheticamp youre into that.

Make your way to Lick-a-Chick near North Sydney if you have time and have yourself some world famous chicken.

Other then that Cape Breton is a dump, dont bother going down to Sydney. I'm sure I missed some stuff if you have any questions let me know!
