I will be installing a Delicious Tuning flex fuel kit soonish. Can someone tell me if I can activate the ethanol % field in Torque?
highly unlikely ethanol % will work with torque.

my understanding is torque app requests predifined factory pid's, ie the factory ecu will respond to these predefined requests. These are standardized across manufacturers hence torque or other apps can request this standard information from many factory ecu's.

Ecutek flex fuel is a hack or patch on the standard ecu code, its unlikely that ecutek would also patch the ecu obd request routines so the ethanol content was readable via obd requests and hence torque apps. Ecutek hijacks the rear 02 sensor or evap purge connection to the ecu for flex fuel sensor input.

If they did that they would not need to sell you the ethanol readout display kit or bluetooth device to send ethanol readout to your phone/tablet ect :-)
