From ground to the bottom of the strake depends on ride height of course, as well as diffuser installed height. The strakes, even in the lowest installed position, sits roughly even with the rear differential. This would be a more important measurement as that does not depend on ride height and should give you a good idea of where the diffuser will fit in the lowest position.

We've got a 2015 BRZ stuffed full of ride height sensors, tire temp sensors, etc. and we're planning on using the data to design parts and validate things we can sell to our customers. We're already working with some other small companies doing exactly that.
You'll have an e-mail shortly. I will let Paul expand on his experience with OpenFOAM. I used it for my senior design and after 9 months, it was still very clunky. It is not something easily learned and the fact Paul taught himself is fairly astounding after using it myself. It is a very powerful tool though, if used correctly.
