What purpose does it serve to double clutch? Why not just shift directly to third, hit the gas to rev match, and let out the clutch?

It's really hard on the 3rd gear synchro to ask it to do all the work of spooling up the input side. Just begging for early failure.
Some (most) people do a clutch-disengaged sequential 5-4-3 shift to spool up in steps. I prefer double clutching to spool up and then letting it sink into 3rd. Zero effort and super smooth.
