So after a year of owning my car I finally caved and did this adjustment. I went 2-3mm above the brake pedal. The adjustment is as good as everyone said. I have been driving manual transmissions cars my entire life, and I never felt 100% confident in my driving abilities in this car because of the clutch.
After I did the adjustment (and triple checked everything) I went out for an hour long cruise to test it out. My launches are smoother, my downshifts are crisper, and all around driving feel is greatly improved. I'm glad that I waited so I could feel how this car was set up stock, but I will never go back to how it was before. This is the way the car should have come from the factory.
