The 2008 ratings are completely unrealistic. I got the pre-2008 numbers no problem. And when I tried, I exceeded them.

I'm not special, half of it is just paying attention.

If the auto is doing 2500 RPM at 74 then I think I will consider dropping in the 3.73 rear diff gearing. Sure, it will make all the gears taller but I can live with that. I don't think it will get me to 2500 RPM at 74, probably something more like 2650 RPM at 70 mph but it's closer.

I think it's closer to 2800RPM at 70mph. The OD in the AT is over 20% taller.
I would do the taller final drive swap and then sell the stock 4.1 gears.

Not bad. BTW, the stock gauges lie. Speedometers always read several percentage points too high.

You can look up the actual test cycle and how much load they put on the engine and stuff. You will see if you have a light foot you can exceed those numbers no problem.

Exactly. 90% of my driving is <50mph. There's no much you can do about long stretches of interstate(without going into advanced tips) but low speed is where the best MPG can be found.
