Yep Three Sisters and hill country north of San Antonio is good overall. Moderate speed limits and very low on cops.

You will not be disappointed if you hit up as many of these parks as possible (Arches, Bryce Canyon, Canyonlands, Grand Canyon, Capitol Reef, Zion, Meteor Crater, Monument Valley). If that's your thing but if you're passing through why not? Also Highway 163 to Monument Valley, the Forrest Gump road if you will.
