I'm no expert but a raw dyno plot is pretty rough. This one has about a 10hp swing between ~5900 and 5950rpm.

I assume the way it works is the dyno gets instantaneous load readings, and it's not terribly precise. If you ran that same car on the same dyno you could absolutely see those points shift enough that you see a 10hp loss or gain at any given rpm. Smoothing tries to compensate for that while adding its own error.
