Looks like 245/35 seems likes a go for me in that case. As for 8-9.5 wheels, is it advantageous to choose bigger or is it just user preference?

There is no "real" reason to go with bigger wheels other than your own preference. Larger = more unsprung weight, more inertia to overcome.
But then I should be on 17x8's, and not running 18x9's with 255's, lol..
