That's a big goal for most of us working on this. I'm using RC model speed controllers which use servo input signals. The signals themselves can be easily generated by microcontrollers like the Arduino.
I'm going to be taping into the throttle position sensor, and using the MAP sensor as feedback for closed loop control of the motor speeds.
In addition a lot of the speed controllers have features like soft start and breaking modes which allows even better control.
