I'm just tired of this waiting game. My dad was saying that in the state of California, insurance companies can't just drop you. And if they keep ignoring me, I should file a claim with the California Insurance Board or something like that... I'm thinking I might have to take legal action if they keep ignoring me...? Or is there even a point??

Well that's new to me... but the insurance company can still deny your claim. And since you're at fault...the other party could go after you if they sue for a large amount.
One of your posts said they're out until the 12th. I would wait until the 12th and see if they say anything... if not...lawyer up...
I think what they need next from you is a statement which is recorded and tells the insurance company what happened from your POV.
So if I can remember...
Accident
File a claim
Go to bodyshop for estimate
Send estimate to insurance
Prove a recorded statement to the insurance company
Insurance Approves / Does not approve claim
If Approved --> Bodyshop will repair.
If not approved --> Body shop will repair out of pocket.
After repairs -- Pay deductible to the bodyshop.
And then it gets complicated if the other party wants to sue you.
