When I tracked my GTI (with DSG), I used the paddles for every gearchange. Not because it was faster, but it was just more involving that way. And I knew for sure what gear I was in and how much engine braking to expect.

If you're just starting out though, you may want to leave it in auto or sport so that you can focus on other things like the line and braking zones.
