Ok so after reading through this thread end to end I went ahead today and adjusted the clutch pedal using the cotter pin/rotate clevis method. It was a bit challenging given the width of my shoulders but I was able to get it done. I have the clutch pedal just slightly higher than the brake. Stock it was a good 1/2 - 3/4" higher than the clutch pedal. This being my first manual it was a big of challenge to get used to that motion but now, WOW the difference is immense. It took three full turns of the clevis to get the clutch positioned where it now is. My girlfriend and I went for a nice jaunt around the local area afterward to try it out and wow, what a difference. Haven't even had it a week and that just turned my skill level up immensely. Thanks so much for this.
