Wing the side mirrors way out. Most people have them pointing down the side of their car, which means the side mirrors and the rear view mirror have a lot of overlap. I have mine set to where the side mirrors are just picking up an object as it's being lost from the rear view mirror, which greatly increases my field of vision to the sides of my car. And by the time the object is being lost from the side mirror, it's in direct line of sight with a simple head turn.
Now if there's someone right next to me just behind my door, they are squarely in my side mirror. It does take some getting used to, but it's much better for visibility. For the record, I'm 6'5" and my seat is all the way back.
A good way to get the initial placement is to lean your head all the way left until it's on the glass, then adjust the left mirror until you can barely see the car. Then lean your head to about the center of the car and adjust your right mirror until you can barely see that side. From there you just fine tune as you drive to get the right angle.
