Goals for car are:
-DD with 4-5 track days a year max
-Good ride quality for crap Detroit roads
-Equal steering response to stock or better
-Neutral to slight oversteer handling
I am also open to other coilover options under or around 1500$.

Not a bad choice. For track work (and in general) I prefer linear spring rates and I wish the Bilsteins were slightly firmer up front but they have good valving. I'd add a front bar at least.
RCE T0 would be worth considering.
