Rubber dome has a rubber membrane which has domes the keys sit on. When you press a key, it bottoms out and the button press is triggered. Over time they get mushy.

Scissors are rubber domes but low travel. Think laptop keyboards.

Mechanical are a mechanical switch that actuates before the key bottoms out. When you get used to them typing can be lighter and more accurate. They're also generally rated to about 50 million keystrokes.
Then you have a bunch of different types of switches.

My preference is MX Brown. Blues are loud and get annoying. Blacks are fine but the added force becomes noticeable if you have to type a lot, or have a long gaming session, and for overall use I prefer tactile feedback to the linear keys. I haven't owned Reds but have tried them. Similar to the MX Brown I have now but without the tactile feedback.
