All filters gaskets have that coating, it is definitely not grease meant for aiding in a proper seal and protecting the gasket. I don't have an old box at my disposal but many say to add some engine oil to the gasket so it won't bind and fold against the sealing surface.
That same coating is even on fuel filter gaskets which I normally wet the surface with a bit of fuel when installing them.
