Definitely having the 3rd pedal is a great aid in winter driving - a nice rev-matched downshift (or double clutch) makes slowing down a breeze.
I've been driving with TC off lately just for the experience (granted our conditions haven't been too bad lately), and the car is very predictable.
If anything, oversteer isn't much of a problem (I only get that by giving too much gas intentionally) - I have found myself overcooking a few 90 degree corners and understeering (nothing straightening the wheels and giving brakes won't fix)
