So yes, the only tune you can use right now is v1.42 and no you cannot log IAM just yet. But you will be able to when the new firmware is released. When exactly this is released I cannot say. But we are working on it right now. It will be a part of the next big data logging update which will also nearly triple the number of available data logging channels to choose from.

No one needs to use .dev files. There are plenty of .bin file that can be used by anyone. The only shortcoming for non-USDM users is not having IAM logging which I understand is unfortunate but temporary issue. And yes, non-USDM rom support for v1.50 maps will include E85 maps for both UEL and UL headers.
