It is more than likely some form of shift cut that allows you to do full throttle shifting. It just takes some of the force off of the transmission and allows the gears to shift.

The most common type of shift cut is an ignition cut where the ECU removes some ignition timing to cut engine power. A lot of times fuel doesn't get cut so good amount of raw fuel will pass through into the exhaust.

The pop is probably the raw fuel burning in the exhaust system. It doesn't damage the exhaust at all but like you said the sound is fantastic.
