You are not doing it right. You should be able to correctly release the clutch without gas to let the car move in 1st gear. If you can do that in 2nd gear that is awesome. If you can do that in 3rd gear then you are really delicate with your left foot control. (try it, it has been done before...)

It takes quite a bit of throttle to get going in third from a stand still. I've done it a handful of times because I thought I had put the car back in first.
