I'm no automotive engineer but I'm interpolating from that you could add roof panels (Targa, t-tops, but not a sunroof) that would have minimal impact to the car, and could potentially even lower the CG.

Let me let you in a on a secret.
Designing a car from the get go as a convertible then adding a hardtop is one of the most awesome ways to produce an amazingly stiff/rigid body shell.
